Levisticum officinale Description

Levisticum officinale, lovage, is a robust herbaceous perennial with large glossy divided leaves and a strong celery-like aroma and flavour. Hollow stems rise in summer carrying broad umbels of small yellow-green flowers that attract beneficial insects. Mature plants can reach around 1.5 to 2 metres high and form a substantial clump, so one plant is usually sufficient for a household herb garden. Grow in full sun or partial shade in deep, fertile soil that remains consistently moist but drains freely. Young leaves can be used sparingly in soups, stocks, stews and salads, while stems and seeds also have culinary uses. Cut stems back after flowering if seed is not required. The plant dies down in winter and returns vigorously each spring.
