Hydrangea flower colour is often reduced to a simple instruction: acid soil makes blue flowers and alkaline soil makes pink ones. That is useful as a starting point, but it leaves out the part that explains why the rule sometimes appears not to work. The decisive factor is aluminium that the roots can absorb. Soil pH matters because it controls how readily aluminium becomes available in the soil solution, while the genetics of the hydrangea determine the range and intensity of colour the flowers are capable of producing.

This distinction explains why two hydrangeas growing in apparently similar conditions may not match, why a plant bought with pink flowers can later become blue, and why a variety with “blue” in its name may flower pink after being grown in a container. It also explains why repeatedly trying to acidify the soil does not guarantee a particular shade. Flower colour is a relationship between the plant, the soil and the availability of aluminium, rather than pH acting alone.

Which hydrangeas can change from blue to pink?

The familiar colour-changing behaviour is associated principally with Hydrangea macrophylla, including both mophead and lacecap forms, and it also occurs in many Hydrangea serrata. These are the hydrangeas in which a flower that is pink under one set of soil conditions may become mauve, purple or blue under another.

This is an important distinction because the effect should not be applied to the whole genus. Panicle, smooth and oakleaf hydrangeas have their own characteristic changes as their flowers mature, often moving from white or cream towards green, pink, burgundy or brown, but these seasonal changes are not the same soil-pH response. White-flowered H. macrophylla also needs to be treated separately. A white hydrangea cannot normally be converted into a blue or pink one merely by changing the soil. Some white cultivars develop coloured details within the flower, and many acquire pinkish or greenish tones as the blooms age, but that should not be confused with the blue-to-pink response of coloured mopheads and lacecaps.

pH is the gatekeeper, but aluminium is the colour trigger

Acidic soil makes aluminium more soluble and therefore more readily available for hydrangea roots to absorb. Once taken into the plant, aluminium interacts with pigments in the sepals and allows the characteristic blue colour to develop. As the soil becomes less acidic and moves towards neutral or alkaline conditions, aluminium is increasingly held in forms that the roots cannot readily take up, so the same genetically responsive hydrangea tends towards pink, rose or red instead.

As a practical guide, soils around pH 5.0 to 5.5 are favourable to blue colour where sufficient aluminium is present, while conditions around pH 6.0 to 6.5 make pink and rose shades more likely. These figures are useful guides rather than guarantees. An acidic growing medium can still produce pink flowers if it contains little available aluminium, while factors such as phosphorus can reduce aluminium availability even when the measured pH appears favourable for blue flowers.

This is why simply saying that a hydrangea needs “acid soil” is incomplete. A mineral soil may contain substantial aluminium that becomes available as pH falls, whereas some organic container composts can be acidic yet contain very little aluminium. Two root zones with the same pH can therefore produce different flower colours.

Why a blue hydrangea can flower pink

Hydrangea macrophylla ‘Nikko Blue’ is a useful example because its name sounds as though the flower colour should be fixed. In suitably acidic soil where aluminium is available, it can produce the medium blue for which it is known. In a neutral or more alkaline root zone, or in a growing medium containing insufficient aluminium, the same cultivar can flower pink.

This can be particularly noticeable with recently purchased or transplanted plants. A hydrangea may have been grown under controlled nursery conditions, moved into a different soil and then take time to reflect the chemistry of its new root zone. Young plants propagated from a blue parent may also begin flowering pink before developing bluer tones once they are established in soil from which they can absorb sufficient aluminium.

The name on the label therefore identifies the cultivar, not an unconditional promise about the exact colour that will appear in every garden. Where flower colour matters greatly, the cultivar and the soil need to be considered together.

How to encourage blue hydrangea flowers

Begin with the soil rather than with an amendment. A soil test gives a much firmer basis for deciding what to do than judging acidity from flower colour alone. If the soil is already acidic but the hydrangea remains pink, the missing element may be available aluminium rather than insufficient acidity.

Aluminium sulphate is commonly used when a gardener wants to encourage blue flowers because it supplies aluminium while also tending to acidify the root zone. It needs to be treated cautiously. Excessive quantities can damage or kill plants, so the application rate on the particular product should be followed rather than assuming that a stronger treatment will produce a deeper blue.

Changing established garden soil is also slower and less predictable than altering a container growing medium. Soil has its own mineral composition and buffering capacity, and surrounding ground continually influences the treated area. Where a naturally alkaline site strongly resists change, growing a colour-responsive hydrangea in a large container may be more practical than repeatedly trying to alter the chemistry of an entire border.

A cultivar's natural depth of colour still matters. Soil treatment can move a responsive plant along its own colour range, but it cannot reliably turn a naturally pale-flowered cultivar into one with deep cobalt flowers. If an intense blue is important, begin with a cultivar capable of producing that depth and then provide the soil conditions that allow it to do so.

How to encourage pink or red hydrangea flowers

Pink and red shades occur when aluminium is absent or unavailable to the plant. Lime can be used to raise soil pH and reduce aluminium availability where a responsive macrophylla is persistently blue, but again the aim should be a suitable root environment rather than an extreme pH merely for the sake of colour.

Very alkaline soil can create its own problems because several nutrients, particularly iron, become less available to plants as pH rises. Hydrangeas growing under such conditions may develop yellow leaves with greener veins even while the flower colour moves towards pink. Raising the pH beyond what is needed is therefore a poor exchange for obtaining a particular shade of flower.

Where pink is the priority, cultivar choice can reduce the amount of intervention required. Hydrangea macrophylla ‘Alpenglühen’ has a stronger tendency than many cultivars to retain rich pink colouring even where the soil is acidic. That tendency is not absolute, and sufficiently favourable conditions for aluminium uptake can still move its flowers towards blue or purple, but it is a better starting point for a gardener who values pink than choosing a readily blued cultivar and constantly trying to suppress its natural response.

Cultivar genetics set the limits of what soil can change

Soil chemistry changes the expression of flower colour; it does not replace the plant's genetics. Different cultivars contain different pigment levels and respond with different degrees of enthusiasm to aluminium. Some blue readily, some remain closer to pink or red, while others occupy a broad range of mauve and purple between the two.

The intensity of a cultivar's colour also tends to remain recognisable as the hue changes. A pale blue form is more likely to become a pale pink than a very dark one, while a deeply coloured blue may move towards a strong pink, red-purple or violet. Manipulating the soil is therefore most useful when the gardener already likes the fundamental character of the cultivar and wants to influence its direction of colour, rather than attempting to turn it into a completely different hydrangea.

Purple flowers often occupy this intermediate territory. Where aluminium uptake is sufficient to alter the pigments but the response is not producing a clear blue, flowers may sit anywhere from lavender and violet to strong blue-purple. That variation is part of the character of colour-responsive hydrangeas and is one reason exact colour descriptions in catalogues should be treated as a guide rather than a permanent specification.

White hydrangeas behave differently

White hydrangeas provide the clearest example of the limits of soil manipulation. Their sepals generally remain white regardless of whether the root zone favours blue or pink flowers in neighbouring coloured cultivars. Trying to turn a white mophead blue by adding aluminium sulphate will not produce the same response as it would in a suitable pink-flowered macrophylla.

Hydrangea macrophylla ‘Madame Emile Mouillère’ illustrates the distinction particularly well. Its main flower colour remains white, although the small centres or “eyes” can show blue in acidic conditions and pink where aluminium is less available. The coloured detail responds to the root environment without converting the white flower head itself into a blue or pink one.

White hydrangeas can nevertheless change considerably through the season. Flowers may begin greenish, open white, then acquire green, blush-pink or other antique tones as the sepals mature. Panicle and oakleaf hydrangeas can also move progressively from white into pink, burgundy or brown. These are developmental changes in ageing flowers and should not be used as evidence that the soil pH has suddenly altered.

Why one hydrangea can carry several colours at once

A shrub carrying blue, mauve and pink tones simultaneously does not necessarily have an unusual problem. Flowers on the same plant can be at different stages of development, and newly opening blooms often differ from mature ones. Individual roots may also encounter slightly different conditions within a large root zone, particularly where soil amendments have been applied unevenly.

Plants can show transitional colour after being moved, and some cultivars naturally pass through several shades as the flowers mature. Late-season changes add another layer, with blues sometimes becoming wine-coloured and pinks deepening or taking on greener, more muted tones. A single photograph taken on one day therefore tells only part of the colour story.

For the gardener, the more useful test is consistency over time. If an established hydrangea changes from predominantly blue to predominantly pink over successive flowering seasons, a change in aluminium availability or soil reaction becomes more significant. If several colours occur only among flowers of different ages during the same season, natural development is often the stronger explanation.

Choosing hydrangeas by colour with fewer surprises

Where a particular colour is essential to the planting design, begin with cultivar genetics and then consider the soil. A responsive mophead or lacecap offers the greatest opportunity to influence blue, purple and pink tones, but it also carries the greatest possibility of variation. Laurel's mophead hydrangeas and lacecap hydrangeas are the most relevant groups when this colour-changing behaviour is part of the attraction.

Where consistency matters more than manipulation, a white cultivar or a hydrangea species whose principal colour changes are associated with flower ageing may be the better choice. Equally, if the existing soil strongly favours pink and changing it would require continual intervention, choosing a good pink cultivar is usually a more satisfactory gardening decision than treating the soil indefinitely in pursuit of blue.
